Lime & Ricotta Syrup Cake

Divine would be the word to describe this cake.

  • 200 g of butter, softened
  • 1tablespoon lime rind
  • 1 cup caster sugar
  • 3 eggs separated
  • 250 g ricotta cheese
  • 1/2 cup milk
  • 1 1/2 cups of self raising flour
Lime Syrup
  • 1/3 cup lime juice
  • 1/4 cup water
  • 2/3 cup caster sugar

Pop the oven on at 180 deg C and grease a Baba Pan.
Cream butter, rind and sugar, until light and fluffy.  Beat in egg yolks, ricotta & milk.  Stir in sifted flour.
In a separate bowl beat egg whites until stiff and fold into ricotta mixture until just combined.
Spread mixture in pan and bake for about an hour.
Meanwhile make syrup: Stir lime juice, water and sugar in a small saucepan over low heat until sugar dissolves and bring to the boil for 2 minutes.
Pour hot syrup over cake and serve with a dollop of cream or yogurt.
