Choc Chip Cookies

I have made batches of these cookies over the past few days.  Given it is school holidays I have had a household of hungry, young boys!

These cookies are so delicious and simple, why buy packaged biscuits!
  • 125 grams butter, softened
  • 1/2 cup brown sugar
  • 1/3 cup caster sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 1 1/2 cup S.R flour
  • 3/4 cup choc chip cookies

Put the oven on at 160 deg C
Line a baking tray or two with baking paper.
Cream butter and sugars until light and creamy.
Add egg and vanilla and beat in.
Add sifted flour and stir until just combined and then stir in the choc chips.  
Spoon onto the tray.  I used a  heaped teaspoon, but it depends how big you like your cookie!  
The mixture spreads so give the cookies some room to grow.
Bake for about 15 minutes until golden.  Let them cool on the tray and when firm move them to a cooling rack.  
They should keep for a couple of days, but they do not last that long in my household!
